Carrollton is in Texas, in the South, where summers are hot and humid, winters are short, and severe storms in spring are a fact of life; businesses run air conditioning most of the year and many open early to beat the heat. Getting around Carrollton is easiest by car; street parking is metered in busy downtown areas, and most suburban businesses have their own lot. Ride-share apps such as Uber and Lyft operate across Texas's larger cities, and public transit varies from extensive to minimal.

Kirby Bagels is hands down the best bagel I’ve ever had! My husband and I both ordered the Gochujang Garlic Bagel, and it was absolutely incredible. The outside had the perfect crunch while the inside was unbelievably soft and fresh. The gochujang was balanced so well with the sweetness it had just the right amount of heat without being overpowering. Every bite was amazing! What made the experience even better was Sam, the owner. He was so kind, welcoming, and attentive from the moment we walked in. He gave us complimentary waters (which were so appreciated in this Texas heat!) and even threw in a chive cream cheese for us to try. It was so creamy and paired perfectly with the bagel. Beyond the food, Sam took the time to chat with us and made us feel like regulars, even though it was our first visit. That kind of hospitality is rare and made such a lasting impression. We will absolutely be back and back often. If you’re debating whether to stop by, do yourself a favor and go. You won’t regret it!

First time coming on a weekday as their hours are Thurs-Sun from 12-6pm. There is limited seating and one restroom so plan on wait times if there is a rush and barely finding parking too! We got our order after 10 minutes as you can ask for the bagels to be reheated! We didn’t see any menu for the bagels just what was out in front, but there was a drink menu! Definitely will try to come again to try other bagels that are sweet, as we weren’t sure if bagels are made on certain days or because they run out that that’s why we didn’t see any sweet ones. Staff was super friendly and attentive and answered any questions we had! Just wished they stayed opened for longer in the day and for more days in the week lol

I had heard about these bagels and decided I needed to check them out! We arrived and the friendly staff greeted us right away. After looking at the options we decided to go with the Cinnamon Crumble Bagel. The bagel is a great size and to me it is non traditional. It is more like a Bun than a bagel, that said it is absolutely delicious! The texture was so pleasing and everything was super fresh. The bagels are light and you can really enjoy one as a snack any time of day. I would definitely return to try some other option!

I've visited this complex a few times, but when I spotted a shop named Kirby, I had to check it out. I'm so glad we did! The beautiful green-and-gold aesthetic feels fresh, modern, and incredibly welcoming. Even better, the owners—a veteran and his wife—are some of the kindest, friendliest people. Now for the bagels: absolutely amazing. My personal favorite is the Gochujang Garlic Bagel. It was perfectly soft and fluffy on the inside, with an irresistibly crispy exterior. The flavor is savory, garlicky, and just the right amount of kick. ✨ Pro tip: Ask for it warmed up. If you're a bagel lover—or just looking to discover a hidden gem—this place is definitely worth a visit. We'll be back for more! ❤️
